Ideas In Food

By Stuart Broz - Posted on 18 February 2009

Ideas In Food is the blog of Aki Kamozawa and H. Alexander Talbot, a team of chef-consultants based in New York City. The two also write the Kitchen Alchemy column for Popular Science online.

Ideas In Food is an amazingly rich treasure trove of ideas. Kamozawa and Talbot are constantly experimenting and investigating new avenues of flavor, and they invite their readers along on their journey. They freely incorporate new techniques with old, and they eagerly share their results. Sometimes they will toss out an idea that has been germinating. Other times they will dump a ton of seemingly-brainstormed thoughts. "What can be used as flour?" is one of the recurring questions on their blog that has really stuck with me.

Chestnut flour is a staple of Corsican cuisine.
