Roasting from Frozen

Martin KingsleyMartin KingsleyBelieve it or not, you don't have to thaw that roast before you put it in the oven. It seems counterintuitive, but you can cook a roast from frozen in only a little more time than it would take to cook a thawed roast.

I picked this tip up over on eGullet, where several people subjected it to testing. I'd be wary of trying it with whole birds, but it apparently works with various solid cuts of meat.

Things to keep in mind if you try this:

  • Use a meat thermometer. You should be doing this anyway.
  • Realize that the temperature will continue to rise while the roast rests. Anecdotal/experimental evidence suggests that it will probably rise more than a normal roast would.
  • Be wary of cooking bone-in roasts this way. It will probably turn out well, but it may take longer than you'd like.
